Not even really a true quick pickle, but tasty anyway.  We finished a jar of pickled mushrooms and rather than throwing out the liquid, fast grilled some frozen okra (enough to get grill marks) and then threw the pods into the jar.  Let them soak overnight and tried them the next day.  They were not true okra pickles, but were crisp (because they went in part frozen) and tasted good.
