Questions about smoking a butt.

Typically I smoke a butt and once it reaches 165 wrap it in foil until it hits 200-205.  My questions....

-Do you all usually mix the juices from the foil in while shredding?

-If I put it in a pan, once it reaches 165 will it develop a better bark than wrapping?

- Will I still get a fair amount of juice if I leave it unwrapped and sitting in an aluminum pan?

The last thing I want is a dry pork.  I am smoking two butts for a friends party this weekend.

-Do you all usually mix the juices from the foil in while shredding? I set the juice aside in a fat separator then add the de-fatted juice back in as needed to get it how I like it

-If I put it in a pan, once it reaches 165 will it develop a better bark than wrapping? Yes but the bottom that is in the pan will have a soft bark like when you wrap it.

- Will I still get a fair amount of juice if I leave it unwrapped and sitting in an aluminum pan? You should get enough juice doing this. It won't be as much as wrapping but still enough for your use.

If you put it in a pan, and you're worried that you won't have enough juice for the shredded meat, add some beer or broth to the pan when you put the butt in it.

If it's a decent butt, you should have plenty of drippings to add.
 
I've done a few unwrapped butts and they didn't come out dry at all and that was cooking only on the grate. It should still be plenty moist unwrapped in a pan.
