Packer brisket on a Traeger

We purchased the Traeger before we knew what a pellet grill should do, and are a bit disappointed in the rather poor temperature control.  Might need to retrofit a PID if we keep this unit.  However, it is a bit bigger than the GMG Davy Crockett, and decided to use the Traeger for this cook.

Used a Thermoworks dual probe monitor, and had to babysit the Traeger

The meat turned out okay

Used some for sammies

Burnt ends for the cook

I'm sorry, but that meat looks like it turned out a little better than "okay"  :drool

You guys are too kind

@ Mike - fluctuating temperatures - sometimes 25F or so.  We don't have a problem coming up to temperature, but the digital readout swings by that much, and a separate Thermoworks probe agrees.
