It's a cool 43 degrees in California's Mojave desert at 6 am and instead of being warm in bed on this Veterans Day I am baby sitting my Webber bell on an Indirect Grill of two, skin on, pork picnic shoulders. A while back I took my BBQ Chef offset into work to do a bunch of pork and brisket for the guys and I haven't brought it back yet. My neighborhood decided to do a Veterans Day potluck yesterday (all vets) and of course PP was my go too.

Rub went on last night


Up at 5 am and took shoulders out to get to room temp. Lit chimney and sipping coffee with dog, and numb fingers, with a beautiful dawn starting to turn blue on the desert.


For all the vets, thank you for your service, for anyone not a vet, thank you for the support.
 
I adjusted so thermo wasn't over coals after picture. I forgot how well Webber maintains temp!
