Making breakfast sausage but DONE with sheep casings.........

I want to make breakfast sausage but I'm sick and tired of paying a ton of money for them and dealing with all the issues associated with them. Any suggestions for other casings to use??? Thanks in advance!!Beer.gif

You can go no casing. Just pipe it out onto wax paper then cut into links and freeze. Once solid you can portion and vac seal.

Sorry to hear your having problems with the sheep's. They can be testy but don't give up on them... Soak, soak, soak then soak some more and get them soft and silky looking.

I just did my first breakfast sausage with sheep. Went very smooth and turned out great.

Followed boykjo's link. Cant go wrong.

I still think this thread deserves a sticky on the front page.  Boykjo's technique makes a massive difference.  Its so easy to handle the casings after they've been soaked properly.  It was easier for me to handle sheep casings after using his technique vs handling hog casings before I found his thread.

I am looking into revamping my thread to include different packaged casings like home packs, LEM sheep's and hogs packed in pure salt. stay tuned........

Ya the price on small sheep casings are crazy. I was gong to buy some for my snack sticks but I will stay with the collagen casings

I can help.  I use the Dewied natural hog and sheep casings off Amazon.  Cheaper than other suppliers and so far so good since I started using your technique.
