Greetings to all.

Friends call me BroJer. Young folk, and all my grandchildren, call me Paw. Enemies call me...ohhhh nevermind.

Originally from Cincinnati, Ohio, now living at Luke AFB with my second oldest daughter, son-in-law, and three of my six grandchildren. Love it out here.

Came across a Big Chief, from our neighbor who came down from Alaska, for twenty bucks. Have been doing some pork roasts, salmon, chicken and various other meats.  Picked up an Outers Hickory Smoker, for another twenty dollar bill, that I am trying to setup just for cold smoking. Did some cheeses a few nights ago that came out OK, but need to modify the box so I am not fighting the temp so much.

So here I am, getting started with just a few bucks and I am addicted. The possibilities seem endless. Went nuts one day, started grabbing anything I thought could be smoked out of the pantry, and just had at it.

Looking forward to getting some tips and tricks and learning from some of you pros. Not new to forums, so yes, I will be reading reading reading before I ask too many stupid questions. Gawd I hate being a newbie.

Rekon I'll stay in the background till it's safe to act up. Maybe...

Welcome aboard BroJer.  Sounds like your well on your way to being hooked on smoking.  (Which means you'll fit in just fine here).

Your on a roll finding cheap smokers.  That's good;  Leaves more money for meat.  No such thing as a stupid question around here. We all started somewhere so just ask away.

I look forward to reading about and seeing some pictures of your smoke projects.

Thanks for the welcome, gentleman.

Half the fun is in tying to get started with as little outlay of cash as possible. Could have spent an easy grand today, just on supplies, and gadgets, and whatnots I've come across, while researching.

Spent wayyyyyyy toooooooo much time reading today and just finished prepping some meat for jerky.

Will add some pics tomorrow in an appropriate thread. Welllll unless I totally bomb. No pics...no evidence

Good evening and welcome to the forum, from a cloudy, rainy and cool day here in East Texas. Lots of great people with tons of information on just about  everything.

Gary

Thanks Gary.

Welllllll the grandkids and life have had me pretty distracted. If I had time to write a post and put up pics, would have to start a new thread called...how NOT to make jerky. Made a lot of rookie mistakes. But, all is not lost, learned a lot and will eat that crap up if it takes me a year. Or, in the alternative, develop a new line of catfish bait.
