FISH SAUSAGES!!!!
when I am in unknown territory I always find something odd to try....Fish sausage was one of those evenings..... coming from Oregon where Salmon darn near swims to your door step (did I say fresh) everyone raved (you Just have to try it) about the "fresh" Salmon Sausage

You can alter the recipe to your taste I like more fennel and this batch I made with 4 oz. red wine and 4 oz. ice water

                          Italian Sausage Mild Hot

  Ingredients for 5 LBS.                                                                                                   
  2   Tbsp. salt                                                                                                            
  8 oz. ice water or wine                                                                                                             
  1 1/2  Tbsp. or more Fennel seed cracked                                                                                           
  1 tsp.  coarse Black Pepper                                                                                                 
  1/2 Tbsp. sugar                                                                                                              
  1 1/2 tsp. crushed red pepper                                                                                              
  1/2 tsp. caraway seeds                                                                                                      
  1 Tbsp. Basil                                                                                                               
  1 Tbsp. Oregano                                                                                                              
  1 Tbsp. Parsley 

  1/4 C Paprika                                                                                                            
  3 1/2 LBS. Pork Butt  ( trimmed )                                                                                         
  1 1/2 Lbs Pork Fat                                                                                                         
  Garlic 1 clove opptional
