The boss brined some chops and told me to grill them so I fired up some lump and threw some maple wood on the smoker, cooked the chops right over the fire for around 20 mins
Make brine:
put 2/3 cup apple cider vinegar into a sauce pan and boil
As soon as it starts to boil add and stir:
1/3 cup salt
1/3 cup brown sugar
1 teaspoon whole black peppercorns
1 teaspoon mustard powder
After the spices dissolve, remove pan from heat and add enough ice cubes to cool the mixture
marinate the pork chops in the brine for 4 hours in the fridge
I cook my chops to 160 F over the coals and a small fire, I used maple wood and lump charcoal
