New wood smoker to the yard

 added some Christmas lights to the house.
It's sure enough the season.  Looks first class to me.

A couple of picks today, I made a new chimney box and used an old license  plate for a cover, then fit the old Char broil gas smoker into the overhang just to keep it out of the weather.
 
Thanks one e Jack, I  gas smoker a gift. Figured I can use it for easy stuff or camping.

Next thing I might do is treat the outside of the cedar .​
 
The racks look like they are lounging in a sauna.  Bet they turn out great.

I can't make out your thermometer.  What temp did you smoke them at and for how long?
 
I need to weld some support bars across the racks, I smoked at around 175degrees, and then raised the t to 225 to cook to them fully.
 
Points for the build! Great job! Did you end up setting it up to hot smoke too? What temp can you get?
 
I am able to get it to hot smoke as long as I leave the fire chamber  door open  to draw in lots of air. I put a metal stove pipe section into the clay flue as well. The metal helps move the heat through better I believe. I have gotten my temps up to 300 degrees at the lower cooking racks , and around 250-275 toward the middle. I just haven't tried to go higher.

Learned a great process of letting the wood logs burn down to charcoal chunks and then put soaked shavings on top, shut the fire chamber door and it slow rolls smoke for several hours!

My daughter Was a big help, she just likes to help build things, my 2yr old was the tool scattered but he was part of the help. When I dropped stuff he picked them up. Finding the clay flues were a bit of a challenge, here in Georgia not to many real chimneys are going into homes.  had thought of just making the fire chamber down below , this would help it hot smoke better and you can add a metal plate as a heat diffuser. However I've been happy with the low and slow capabilities with the off set design. Of course it takes a bit more space but it great to use.
 
Well i'm still experimenting with the smoke house, its been fun for sure. I bought a small welder so i will be fixing up another rack shortly! 

I do like the wet wood shavings as i can pack a bunch of it in the firechamber over hot coals , I know soaked wood chunks work as well but havent used alot of the wood chunks yet.
