My Sous chef wanted to step into the roll of Chef last night and make one of his favorite recipes. To kick it up we cold smoked the ground turkey for a hour.
Wonton wrappers - 36
1 pound ground turkey, beef, sausage etc.
1 small container ricotta cheese
1 package mozzarella
cup of Parmesan
fresh basil, oregano, parsley
3-4 cloves garlic - minced
1 can marinara sauce
salt & pepper
We cold smoked the meat for 1 hour, then browned it in the cast iron, add minced garlic salt pepper and sauce, simmer for 10-15 minutes
Chop basil, oregano, parsley mix into ricotta cheese.
Preheat oven to 375. Spray muffin tin with spray oil.
Press 1 wonton wrapper into tin. Add 1 spoon full of ricotta, 1 spoon full of meat mixture. Add a pinch of mozzarella and Parmesan. Top with wonton wrapper, repeat. After second layer of meat and cheese top with wrapper, a bit more sauce and cheese on top of that.
Bake in oven for 15-20 minutes or until wontons are golden brown.
He loves using the pull cord chopper! chopping herbs for ricotta.
