Sorry everyone, been out for while being out of state couple times and taking care of my wife after some lipo surgery.

Did some SS chubs yesterday. Stuffed and netted.



Used 2 different size netting. Room temp hanging before the smoker.


Getting some hickory/pecan smoke in my a-maze-n tray


I been doing this a few times now. Get the chubs at an IT of 150*. Vac bag and hang and they will IT at 152 all by themselves. Cool but i do go thru some bags.

The bags work pretty good. Trick is to pull the chubs from the smoker at 150 IT or even 149.
 
 
Just a question......made a lot of summer sausage but why the netting?? What does that do or help with? Thanks.

Not really needed for SS, i just like it the way it looks.

When my wife retired we moved from the Savannah area, did some RV'ing bought a larger motorhome. Now we are in S,Fl at a RV Resort my wife works here 4 days a week and we are trading our MH in for a 42' 5th wheel with 4 slides at 36"

More room for toys...Lol
