Stopped to grab a quick road snack one day, in their hot deli they had a couple of fried bacon wrapped chicken tenders. I got two, they weren't bad but they were fried. With that bacon taste in my mouth, I got to thinking how much better they would have been with a little smoke. So today I tried my own recipe.

Chicken tenders, lightly sprinkled in my own special rub, then wrapped in a piece of peppered bacon.

I used Hickory and smoked them for 90 minutes at 225.

My neighbor could see and smell the smoke and came over just as I was pulling them out. I gave her a couple. She said they were the best thing she'd ever eaten.




Now I'm waiting for the wife to get home and give me her opinion.

Thanks. Was going to make some Armadillo Eggs, 1/2 Cheese stuffed jalapeño wrapped in pork sausage formed into a ball and smoked but forgot jalapeños and sausage. Haven't tried ABTs yet since I'm about the only one who eats them.
 
Haven't tried meatloaf yet - looks good. I'm in the same boat with ABTs, my wife won't touch 'em but I don't miss an opportunity if we have have company for the smoke - then I load up!
 
I do this with boneless skinless chicken thighs all the time.  Sometimes, just the chicken and homemade bacon (I season the chicken with my homemade rub also).  Sometimes I stuff a half slice of jalepeno and chunk of pepperjack cheese in the chicken and then wrap with bacon.  Both are excellent.
 
ALL THIS SOUNDS GOOD! Meatloaf, Armadillo Eggs, Stuffed Jalapeno in a Chicken Thigh...Need to go shopping...JJ
 
Made a batch of these over the weekend. Also ABT's stuffed with cheese and leftover smoked chuckie - awesome! Sorry for no Qview, pic was blurry - must have been the Fat Tires, lol
