Had some boneless skinless chicken thighs, so I went and got some jalapeño peppers, some sharp cheddar and bacon. Fixed the all up and smoked them with cherry at 240 for almost 3 hours till they got to 169 IT.
I had 4 peppers left over and 4 slices of bacon so I just wrapped them up in bacon by themselves. I'd rather have beef or pork but these were pretty tasty.
