WESTERN MASSACHUSETTS
St. Louis style smoked spare ribs, with apple juice moisture tray and an occasional spritz with apple juice. Smoke from a 50-50 mix of apple and cherry wood. That's what's for dinner around 4:30.

Good start. I would like to be smoking some ribs but family wants traditional Chicken Paprikash...JJ
 
Warmed up smoker yesterday w naked rib rub on 6lb chicken and today 3 racks of baby backs a little heavy on the brown sugar.
 
Came out OK....would have liked just a little more sweetness in the bark.  Meat  consistency was great.  Used the 3-2-1 method.  Maybe should have mopped a little more with the honey than I did.
