Looks great! Fat cap questions for you though. In your first pic it looks like it might have been trimmed a bit, but it's hard to say. Was all of that left on or no? Can't really tell from your cook pics.
so do you trim fat before pulling?? I usually do, but not all of it just thin it....like we never eat chicken skin but do cook with it on... if I didn't have cholesterol problem I would probably eat it.. when I look at guys eating a very thick rib steak and they throw nothing I kind of just cringe. but I know its probably not the right place to post and will get flamed. please not to hard... I know there is more like me but wont come out...
