Cured, Smoked & Pulled Pork Butt

Cured, Smoked & Pulled Pork Butt
I had a half of a Butt Curing in the fridge, Today was it's big day.

Butt cured for 8 days, Pulled it out this morning rinsed and soaked it, patted it dry and put a light coat of Garlic, onion & honey powder along with some black pepper. Let it sit in the fridge a couple of hours while I did a few other things.

Fired up the smoker with a chimney of lit charcoal and a big split of Pecan, got up to 225º pretty quick, 

Put the meat and beans on.

Didn't do a step by step, since I have done one before  (JUST FOLLOW BEAR'S STEP BY STEP)

Started with a whole butt


De-boned and removed a little fat


Split in half


Weighing so I can get my TQ and Brown sugar measured correctly


Half a butt rubbed and in the zip-lock to cure

After 8 days rinsed, soaked, dried and seasoned​
Waiting to go on the smoker


Beans ready and waiting


Butt and Beans on


Have to have a little Boudin !!!


Everything on


Beans ready


Added Pineapple rings and juice, cover with foil and back on the smoker


Butt ready,  Had to take a fey links and 1/2 the beans over to #2 son's 

since he had ribs going on his smoker


Look at that beautiful pork   Wow !!   you can see the steam

Thanks Buddy, after all it's your Recipe.   I'm not saying this because I cooked it, all I do is follow your step by step   BUT THIS STUFF IS FANTASTIC,  you ever make it once I promise it wont be your last.  The only thing I added was a ham glaze.

Yeh I knew I should have waited to post, with all the football games going on, but oh-well

Uh, what happened to the other half?
 As bad as I hate to admit it I baked it in the oven,  I know, I know    But I have to keep peace.  A while back I got banned from smoking, so I don't want to mess that up again

BTW   I'll be smoking a whole butt in a couple of days  for some friends of ours.  (Not Cured)

Totally understand, Gary! A few weeks ago I pulled a rack of ribs from the freezer and Mary Lou said she wanted to do them in the NuWave instead and was kind of tired of everything smoked all the time. Give and take is what it's all about!

They're actually pretty good that way. Strange machine, but she does wonders with it.
 
Hmmm. I have a good amount of tender quick left over from a sausage making party. Pork butts are kinda cheap right now. Maybe I'll give this a try.
 
Yeah I looked at the Grocery store flyer, this week Pork Butts are $.99 lb
