11:00 pm Friday night: Rubbed baby backs with yellow mustard. Rubbed with mixture of brown sugar, paprika, garlic powder, onion powder, crushed red pepper, cumin, celery salt, salt, and pepper.
Put in the fridge over night.
12:00 pm Saturday noon: removed ribs from fridge and added some more rub. Turned on MES 40 to 230. Lit AMPS with two rows of pecan and maple.
12:30 pm: put ribs on second rack, put in AMPS. Turned MES down to 220.
2:30 pm: removed ribs and AMPS, separated burning/unburnt pellets. Foiled ribs with a brush of apple juice/Stubbs bbq sauce mix. Returned foiled ribs to smoker.
4:15 pm: relit AMPS.
4:30 pm: turned up MES toc 250, removed ribs from foil, brushed with Stubbs bbq sauce and returned ribs and AMPS to smoker.
5:30 pm removed ribs and rested covered until wife's sides were ready.(about 15 minutes)
