Picked up a pack of baby backs and beef ribs at Sams yesterday. Seasoned them up last night by pulling the membrane and rubbing with yellow mustard. Mixed up 2 parts black pepper, 1 part seasoned salt, 1 part garlic powder, and 1 part brown sugar. Put a good coat on each rack and put them in the fridge over night.
Fired up the smoker with lump charcoal and apple wood around 10am this morning. After the flames burned down I closed her up and locked her in at 250. Put the ribs on at 11:30 and smoked them silly until 1:30 with thin blue smoke. I spritzed every 20 or 30 min with apple cider vinegar, Apple juice, and worchester sauce.
Foiled at 1:30 until 3:00. Back on the grates until 5. Pulled them off and let them rest from 5:00 until 6:00.
4 adults and 2 kids later, none are left lol.
