A few weeks ago I smoked a couple things at work while a few of us guys had the place to ourselves.
(Most of the office staff was gone) I was using the boss's mes40.
Day 1: Reverse sear giant sirloins.
Day 2: Beef tenderloin.
I don't have many notes for these smokes as we did have work to do as well.
Both turned out awesome, especially the tenderloin.
Loin prepped for an overnight bath with whooshy, pineapple teriyaki, and spog.
Did this while the steaks were smoking Thurs. for a Friday smoke.
Sorry! I didn't get any sliced shots of the steak.
