So I've had my UDS built for about 6 months now.

Couldn't ask for a better smoker but I'm curious as to what you guys all use for a coal ash catcher under the basket?

Also I use bolts that a screwed in through the outside of the barrel to hold up my meat grates. What do you guys all use or is that pretty standard?

That would work but more looking for a way to lift it out with the coal basket when needed.

Thinking maybe a cooking pan possible?

Pan will work. Really anything thats curved would work.

When I built my charcoal basket I bolted the bottom grate through a few short sections of pipe as spacers to a cheap pizza pan from Walmart.  The pizza pan acts as the ash catcher and all of the fallen ash comes out when I pull the basket out.

Here are a couple of photos of my basket

And with a 1/2 a load of charcoal in it, which is good for ~8 hours.  For a longer cook I can fill the basket up further, and of course I use chunks of wood for the smoke.
