Hello,
What is the vertical smoking chamber for in this photo? I assume it is for specific cuts of meat that need to cook differently from the main/middle cooking chamber. Can someone please explain what I would put where if I were using a smoker like the attached photo and it were using both the main and vertical cooking chambers.
Could I literally put briskets in each place in the main chamber and also in the vertical chamber and expect consistency in cook time and quality?
