Gotta be something wrong with me. have today off and i got up at 530 am to get the UDS smoker fired up in the dark.

9 pound pork picnic started at 630, If all goes well we will be eating pulled pork for dinner.

1st 2 hours I had a hard time keeping the drum under 270, the last 4 hours its bounced between 235 to 265

meat probe is at 158 now

Burning a 70 / 30 mix of KBB and Cowboy lump with some red oak chunks mixed in

All I have to say is it better be good

There is something magical about pulled pork.  When it it finished on the smoker and you can just pull that bone out with your hands, the aroma of the freshly smoked pork is enough to make you smile for the rest of the day.   Nice pork you have there.  Stay smoking my friend.
