Nevrsummr, I started building this because I got into making pepperoni snack sticks,summer sausage,and smoked sausage links and the bradly is way to small for the batches I make and I would spend a week smoking. I also want to start cold smoking bacon and didn't like the options for the bradly. I'll keep it for the small stuff like jerky and loins and what not. You can never have to many smokers. I'm hoping to build a small walk in cooler for deer and elk.
 
Progress looks good. Should be able to fit 60 lbs in that thing. I have access to a big walk in cooler but I decided I would rather have my own small freezer. It will be nice to adjust the temp to whatever I want.
 
Well I broke down and spent some money. Ended up with a 3800w oven element. And the smd 100. I took it up to 250 for and hour, then up to 290 just to do it. It took 15 min to go from 130 to 250. I need to play with it some more to figure out perameters and how to use the controller. Still need to do some welding for racks on the inside and I'm probably going to change the door gaskets.
