Trying breasts in this MES for the first time today. In fact, they went in about 20 minutes ago along with some beans & pork neck bones (covered in another thread). I've done wings a few times with success so now I wanted to try breasts. And these are some good-sized ones. I put my chicken rub to them this morning, buttermilk-brined them for a couple more in the late morning til about noon & put them in a little while ago after bacon-wrapping, which I've never attempted before. But they're in now & I have a few pics to share.

 They're in & I plan on saucing them with some BBG Championship Red sauce prior to removing from the smoker. I can only hope they're even CLOSE to as good as the wings have been. We'll see soon enough.

Nice looking , Tumbleweed ! The Wifey likes the boneless , White mear too , she doesn't like to chew off the bone and dislikes the Dark meat ( I keep telling her it's better and juicier but she don't , and that's that ) ! Oh well , a Happy Mama makes the World less bumpy ! ! !:biggrin:

You better put your running shoes on CB ! ! ! 22 hundred miles sepertes you from Chhi-Town , that's 22hours averaging 50 MPH :sausage:

Thanks OS. The breast meat is my wife's favorite as well. I like'em ok but wings are my favorite. I'll do legs like once a year (she don't like'em) & neither of us really like thighs. I WILL say that she puts up with my wings way more than I have to eat any other piece, so I can't complain. Happy wife+happy life, or so they say.

Tumbleweed, I was curious. Did you use any kind of spray or mop during the smoke? Does the bacon do that for you? Ive never wrapped with bacon but I was planning on stuffing some breast and thighs this weekend for a smoke! They look amazing! Great job!
 
That looks really good. I was curious if the breast would dry out any or not. Bacon wrap is a always a nice touch!

I attribute the moisture they retained to brining them. I'm sure the bacon didn't hurt, though.

No spraying or mopping was done. I did not rinse the brine off, either. In fact, I added a little more rub to them right before putting them in the smoker. The last 3 pics of the breasts while they were still wrapped DO show them lightly sauced, though. Thank you for the kind words.
