Pork Neck Bones (MES30)

Well I've never had them but have spoke to several people who say pork neck bones can be quite good when smoked, whether by themselves or as part of other dishes, so today I will give them a shot. My goal with them is to rub'em up, pan'em up & let 'em go for a couple (maybe three) hours. After that, I may foil'em up, depending on what their texture/doneness seems to be & after a little while more (an hour or two) maybe sauce'em up with some homemade Dr pepper BBQ sauce. The woods will be a mix of hickory & cherry, which as we speak is filling the backyard with that familiar, inviting smell that makes me want to stay home & cook all day on my day off. I'm thinking of keeping some of the meat aside to add to some beans I'm going to make later, as well.

Neck bones-


Rubbed & refrigerated for a few hours-


Just went in the smoker-


Smoker's at 275 & they are in so I probably won't have much to report for a little while. That gives me time to get my rubbed chicken breasts in their buttermilk brine & start getting my beans put together.

After about 3 hours I went ahead & foiled the pan. We'll see what happens in the next couple of hours.

The picture is crappy, as the foil I was about to put on cast a shadow over the four pieces in the back of the pan causing those pieces to look darker than the rest. They actually all look the same.

Let that be a lesson----Looks like the back ones are burnt to a crisp!!

Out of curiousity, why did you pan them instead of putting them straight on?
Just so it would be easy when it came time to foil & that maybe they could braise in their own juices. These were small pieces & I didn't want to dry them out.

Thank you & as usual my friend, you were correct.

They were nice & tender, not dried out or anything. I could have probably gone a little easier on my rub, is what the wife said, but pretty darn good. I found it was easiest to just eat them with my fingers & pull the sweet, tender meat right off from the bone. It didn't take very much of a tug to get it off clean. The Dr pepper sauce i used on them & the beans went well with both.

Wow! Those look delicious.  The only thing I have ever used those for is gravy (italian meat sauce).  Never thought to smoke them but you just convinced me.  They are usually very inexpensive in the markets around here so I can see adding those to my shopping list next time I'm planning on running the smoker!   Great smoke!

Thank you. They were easy as ribs or a pork butt, but with no pulling (except as you eat them) or slicing. Their smaller size is ideal for fittin' a couple in my lunchbox each day for the next 4-5 days. I always keep a bottle of sauce at work for whatever I bring as well. If these are like most things I've smoked, they'll be excellent reheated.

I hadn't thought about smoking neck bones. I think I will be doing a batch and freezing some to add to soup and beans.

I didn't really get to "Save" any, but the biggest one found it's way into the beans I made. The wife wasn't a fan (only because I told her what they were) & preferred the bacon-wrapped chicken breasts I also did (different thread over at Poultry), but that meant they were all mine! I will pick these up again whenever I see them on sale. It was a chance to smoke something I never had & the experience was positive.

After reading this post I picked some necks up this weekend. Threw them on the smoker while cooking some ribs, pulled the meat and added it to some baked beans. It was really good. The necks were cheap, easy to cook, and added a great flavor to the beans.
