I'm going to be smoking a brisket this weekend and had a couple questions about it.
1. My temp gauge on my smoker has been known to be off, so what would y'all recommend for a thermometer to attach for a more consistent temp?
2. I'm going to be soaking some cherry-wood chips in vinegar has anybody ever done this and what was your results?
3. Any good rub's out there that someone concocted? I'm looking for something new..
