UDS Planning Stage

I am finally at a point where i can start purchasing and building the parts for my UDS, so hopefully i will have it ready before winter hits.

I still am not sure about making the cooking grates fixed positions instead of adjustable, i feel that they will be more sturdy if thew are fixed, but i still like the idea of adjustable cooking racks...

 

Thoughts, ideas, concerns, & comments are greatly appreciated.

Mine is almost exactly the same without the lowest rack. I works great. I wouldn't worry about the adjustable rack. I can fit almost anything on my top rack height wise so I almost always use the top rack only.

Thanks i mostly cook for around 6 people when i smoke, so i believe the two racks would be good and it seems there is plenty of room between them to cook for a lot more than 6

That setup will definitely have plenty of room. I can easily cook two pork butts on one rack and could fit three if I wanted too.

hmmmm.... that sounds good 

 

another ? do you just run temp probes through the top vent and do you use a dial therm for the smoker temp or probes as well?

I have a dial therm in the lid but I only use it to track the temp when it is heating up or cooling down (when I don't have the probes in). I run the probe wires through the holes in the weber lid some of the time but when I am lazy I just set the lid on the wires. Since neither of those methods works well I have drilled a hole to run them through but haven't used my UDS since to test it.

hmmm yea i think ill put a dial therm in somewhere i would really like to put one of them grommet holes in with the silicone thing like the WSMs have for the probes...
