High temp caulk for build question

I am building a new smoker and wonder what guys use for caulk

The red or burnt orange hi-temp!  You can get at Hdw store but I get at my Heating and Air supply store in caulking tube!

I am sure the calk from the big box store will work.

 

The thing that would keep me up at night is

What is it made of?

How long will it out gas into my food, hours, days or years?

If someone does get sick, will you be thinking about the calk then?

 

Look for calking with a NSF label.
