Rubbed and ready for the smoker

And in the smoker they go

They will smoke for 3 hours at 225 using hickory and cherry. Then into foil they'll go for 2 hours, then I'll remove them from the foil and cook another hour. Will post updated qviews as time goes on.:grilling_smilie::grilling_smilie:

2 Questions -

1) Are you going to put anything in the fil with the ribs?

2) Are these really St. Louis cut? It looks like they have a chunk of flap meat still on.

Just being curious......
 
At 2 pm I foiled them with a bit of apple juice inside.
I got these at Walmart, 15 bucks each. Package said St. Louis ribs but I agree they aren't trimmed like the St. Louis ribs I'm accustomed to.
