Hello everyone, I started smoking on a propane vertical smoker. I just bought an Old Country Pecos offset smoker. I have used it once. I smoked a new york strip. Not the best off choice as I am used to smoking pork. I took it off a bit soon but was tender and full of flavor after finishing it in the oven. Pork loin going on today! I like the more hands on with the offset smoker. I look forward to learning and leaning on everyone while I get used to the new smoker!
 
Welcome from SC. This is a great site with lots of folks who are always ready to share their ideas and tips. All you have to do is ask and keep reading. Next time, reverse sear that strip. There are posts here that will give really good details. The outcome is fantastic.

Gary, Thank you for the welcome! I do agree, there is a ton of information on this site! I have been all over it and have enjoyed reading and learning about and from everyone. I have two butts and some ribs going on the smoker Saturday and I have done my homework ( obtained from this site!). Thanks again and look forward to much more smoking knowledge I'm sure I will learn from you guys! Hopefully one day I will have some knowledge to throw back in the pool!
