Hey all,
I smoke on a 48" Myron Mixon flatrack water cooker and will be doing my first whole hog in a few weeks. I know that you can't get crispy skin on a water smoker but am wondering if anyone has then taken the skin from the cooked pig and tried frying it up or baking it with success? I just hate for it to go to waste.
