I guess this forum is where I introduce myself. My name's Doug - from Solon Springs, WI. I have NEVER smoked meat in my entire life and I'm almost 62 years old.
I'm a retired Merchant Marine (Pilot) and I've been gone 8 months a year for the past 39 years. I've always thought I would like to try smoking meat so I bought a Masterbuilt 30" electric smoker when my wife was watching QVC. I have NO clue about what I'm doing.
I came across this forum when I was trying to figure out when/if to use the "waterpan" in my shiny new smoker. I searched the forum and found that it's alright to either use it or not - depending how it works for me.
