I was smoking a turkey so I figured , why not throw on a chicken too!
Brine (used for whole Turkey and whole Chicken at once in a large cooler)
2 Gal Water
2 Cups Kosher Salt
2 Cups Sugar (1 Cup white + 1 Cup Brown)
4 TBS Black Pepper
1 TBS Dried Rosemary
1 TBS Thyme
RUB (enough for 20 lb turkey and whole chicken):
1⁄4 cup brown sugar, packed
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon cumin
1⁄2 teaspoon cayenne pepper (can use more)
1 tablespoon garlic powder
3 teaspoons mustard powder
2 teaspoons salt
2 teaspoons black pepper
Brine chicken overnight
add rub above and below skin
add butter under skin
cooked at 280 until breast reached 165, a little less than 3 hours
