Doing my first brisket on my new pellet cooker, and my first ever prime brisket

Last evening before I left for work I trimmed a 17+ pound prime packer I got from Costco. I don't know why I trimmed, I never have done it before. Anyways, I rubbed it with some kosher salt, fresh ground black pepper, and granuated garlic and its now resting in my fridge, waiting for me to get off work at 7am. I debated for a couple days between low and slow and hot and fast, and I guess now I've defaulted to hot and fast since I didn't put it on before I left work last night. 

 

I'm kinda nervous I guess, I hope it turns out. I'll post pics if it doesn't turn out terrible!

Did you do the hot and fast or low and slow?  17lbs will take some time.  I wanna know how a prime brisket tastes, I'm lucky to find choice down here.

Sorry about your results.  I've never tried hot and fast with a brisket, I've seen it done on the cooking shows.  Think I'll stick with low and slow, and keep wondering if a prime brisket is worth the price.

Well, I think the problem was the smoker got TOO hot because it ran out, and pellets got dumped.

As for prime, that's all they have at Costco. And it wasn't really that much more than non-prime at Wal-Mart.

Sorry to hear about your loss, I know it hurts more being a prime.  Briskets aren't easy, it takes practice, and your next one will go better.  Are you using a probe thermometer and were you around while it was smoking?

I've done a number of brisket before, but this was my first on this new cooker. I fell asleep on the couch while it was cooking, that's when it ran out of pellets. I was using the probe that came with the cooker.

Sorry to hear that. Never good when meat goes bad but with that price, that'll sting.

I don't know your history with brisket beyond the one you posted about and so I am compelled to mention that the flat is inherently far more lean than the point and, therefore more likely to dry out.
