Last evening before I left for work I trimmed a 17+ pound prime packer I got from Costco. I don't know why I trimmed, I never have done it before. Anyways, I rubbed it with some kosher salt, fresh ground black pepper, and granuated garlic and its now resting in my fridge, waiting for me to get off work at 7am. I debated for a couple days between low and slow and hot and fast, and I guess now I've defaulted to hot and fast since I didn't put it on before I left work last night.
I'm kinda nervous I guess, I hope it turns out. I'll post pics if it doesn't turn out terrible!
