Not having much time to smoke anything this week due to work. I ran across a deal at one of my local grocers today, split chicken breasts for $1.29/lb. Not being a huge fan of chicken breasts alone, unless of course they're attached to the whole bird. I was headed home with two family packs with the intentions of smoking them tonight, no matter what. 

 

Did I mention these were some of the largest breasts I've fondled recently? :yahoo:  Ten split breasts weighed out to over 12.5 lbs. Well over a pound average each!! 241.png Having this much chicken at once, I decided to make a couple of variations to keep the meals varied and fun.

 

 

 

Oooooops, now I'm down to nine split breasts. My gf had to confiscate one to make her favorite soup, tom kha gai. A Vietnamese coconut milk soup with chicken, galanga, lemongrass, mushrooms, chilies...but that is another topic altogether... :redface:

 

 

 

So now we return to our regular programming... :icon_eek:

 

 

 

Almond Smoked, Rubbed and Sauced Chicken Breasts

 

 

Today's first random rub is brought to you by the letter "C"...

 

...cumin...

 

...coriander...

 

...chili powder...

 

...celery seed...

 

...cracked black pepper...

 

...and a few other spices and herbs... 

 

  

 

  

 

 

 

...our first two pairs of naked breasts...

 

...rinsed and gently patted dry...

 

...my random rub liberally applied and massaged into all the nooks and crannies...

In our second episode of sfprankster's (mis)adventures Fondling Breasts-Two Ways

 

 

 

We find our adventuresome antagonist making another random rub from the whimsical spice drawer... :cool:

 

 

 

Almond Smoked Lemon Herb Chicken Breasts

 

 

 

Making a much different rub for this variation on the chicken breasts, using mostly herbs and the usual suspects, salt , fresh cracked black pepper, garlic and onion... 

 

 

 

 

...once again, rinse and pat dry the breasts, apply the rub liberally and massage in...

 

...this time we added some fresh lemon zest and lemon juice after the rub was applied...

 

 

 

 

...I saved a lemon or two, to squeeze onto the breasts half way through the smoking process...

 

...and again when I begin to reverse sear the breasts...

Our WSM is loaded with lump charcoal, several chunks of almond and is ready for action...

 

...fired up, holding a steady 300, emitting the desired TBS and both grates loaded to capacity... 

 

...lemon herb on the bottom, rubbed and not sauced (yet) up top...

 

...temperature probe inserted into the biggest, fattest breast...

 

  

 

 

 

...just under an hour into the smoke...

 

...time to squeeze some lemon juice onto the lemon herb breasts...

 

...relocate the temperature probe...

 

...gotta make sure the lower grate isn't cooking too fast... :icon_wink:

 

...all grates reloaded, up and running...

 

  

 

 

 

...rubbed breasts looking like they need some attention...

 

...slathered with my S(moke) P(rotection)F(actor) 50 lube and rearing to go...

 

  

 

 

 

...internal temperature hit 160...

 

...pulled to rest before reverse searing on my kettle...

 

...rubbed and sauced on the left, lemon herb on the right...

 

  

 

 

 

...first round of reverse searing begins...

In our final episode of sfprankster's (mis)adventures Fondling Breasts-Two Ways

 

 

Our final episode begins with a sheet pan full of chicken breast yumminess...

 

...resting after a brief, two hour smoke on my WSM...

 

...couple minutes per side reverse searing on my trusty and dusty kettle...

 

...the results: moist, tender breast meat with a nice bite through, crispy skin...

 

  

 

 

 

Simply served with sauteed asparagus...

 

 

 

 

More than enough to take with us on our trip to Los Angeles tomorrow...  PDT_Armataz_01_42.gif  with a couple of fun stops in Paso Robles on the way... driving.gif

It'll be the only food, other than chocolate, at tomorrow's event and once the smell is released after reheating, everyone will ask where it came from. For some reason, no one brings anything to eat to a chocolate competition. :confused: Like everyone believes man or woman can survive on chocolate alone... :icon_eek:

It was one of those days yesterday, after 4 hours of sleep the night before. A string of 6 appointments so close together, after the first, I was progressively later to every one of them. Happened into the store on the way home, and WOW, one of those deals I couldn't pass up. Then from somewhere out of the blue, I thought it was a good idea to add the smoke into the mess. At least the chicken turned out good!!

 

Another 4 hours of sleep last night and it's time to load up and head south to LA today for an event your wife dreams about, an artisan chocolate competition.  Oh the fun!! :icon_mrgreen: There's another one scheduled in your neck of the woods coming up in January we're thinking about attending. I'll let you know when it gets a little closer to the date.
