just started the smoke after years of wanting and waiting. mb30 to start off, we shall see where it goes from there. born and raised northern cal native with wife and 3 kids (self appointed testers)

did two fish and a beef w/jd oak and hickory over the weekend in the brand new smoker. momma said first fish was a little too sweet but the kids polished off her leftover without complaint. second run of fish and beef was met with big thumbs up.

started a log book of rub/brine and cooking times and temps and looking forward to experimenting to find the perfect combos and because i'm anal like that. next up is some pork product and some shellfish
