I have a question on my reverse flow looking for help

FIRST..... space the plates so you have 1/4" - 1/2" between them.... remove the exhaust extension.... do a test......
 
If you want.... It should probably go on the first plate, closest to the FB.... that way steam will travel full length of the smoker... It can be that bread pan...
 
Well here is the up date . Temps are higher and it looks like it flows better. I am going to mess with the gap of the plates a little more I can see the difference.
