I've been using a gas smoker for a few years now, mostly for wild game meats.  We are avid hunters and prefer the wild game meats over standard grocery store meats.  I have two boys, ages 12 and 14,and a husband that keep my freezer fairly well stocked with elk, venison, and grouse and have started raising my own turkeys and pheasants.  We make all our own summer sausage and polish sausage, in addition to using the smoker a lot for roasts, birds and even vegetables and seafoods.  Today, my 14 year old is taking his first turn at the smoker with 4 of our pheasants. 

I've used this site for a whole lot of research and advice over the past few years.  Thought it was maybe time to join and contribute some of what we've learned works for us.
