Hoping you like the Butt

Initial Plan

Went to Sams Club today and bought this. Couldn't help. Will be smoking starting at 6am tomorrow before work. Will come home at lunch to check on it. Plan on just smoking all the way through, no wrapping.


What Actually Happened

  • Smoked (Hickory) at 250 for 14 hours
  • Stalled around 170-180 for awhile, so I wrapped for last 2 hours, then it was still at 195 so I just threw in oven at 350 for 1.5 hours.
  • Came out perfectly. Fell right apart.

What I learned
  • Mailbox AMNPS Mod is going to have to happen for these long smokes. No question about that. Also needing to buy an iGrill2 to make watching easier.


Thoughts?

mmm...mmmm  I'll be interested to hear how the straight thru cook goes.  I'm considering doing that way on my next butt.

This'll be my first butt. No idea what the temp will be when I get home. Only decided to do the straight cook because I have to work

Came home and saw it was at 180°, decided to foil it. Will update when it's out

Well maybe next time you can go foil free and see which you prefer! You'll get a crusty bark but it will soften while it rests in foil. Looking forward to seeing your finished pics!

Was too tired tonight to mess with anything. Wrapped In foil and put in a small cooler and will pull tomorrow morning. But as I was doing this, the bone fell out! Can't wait to eat tomorrow.

I'm with 100% on the iGrill2.  I'm going to hold out until Christmas, my family always wants to know what they can get me and I never have any ideas.  Now I do....  If it doesn't show up under the tree, I'll have one by the next day.

Hah, I'm just trying to justify spending ~$120 on an iGrill2 with 4 probes. But I'm with you on it being a fun gift, I'll end up holding off too.
