Hi, My name's Smokin MikeJr and I'm a smoke-aholic! I live in lake Saint Louis, Missouri in the good ole U.S.A.! I love smoked meats, brisket, ribs, pork, chicken. I have never owned a smoker. I recently bought a Oklahoma Joe's Longhorn 3 burner gas/charcoal/smoker. I've not fired it up yet. I've been doing research online and am looking to do some recommended mods, Nomex seals, tuning plate and lowering the internal stack to the grate surface to improve efficiency before I get started. I bought a Maverick ET-732 digital thermometer. Anything else you all can recommend before I get started? Maybe where to get the mod. Supplies? Hope to get some great tips on here. Thanks
