Mule's pulled pork in the MES40 with AMNPS loaded with hickory and apple pellets

Hello friends. It has been a while since I have been on. It is winding down my busy time of year. I have kept the TBS going while I have been away. Yesterday morning I rubbed 2 butts (yes I'm still rubbing butts). After resting the day I got the MES40 up to 225 degrees and the AMNPS loaded with a mix of hickory and apple pellets. 7:00 pm the butts went in the MES. This morning at 7 I put the probes in and bumped the temp up to 230 degrees. At 11:30 the first one is 205 and pulled and wrapped in foil to rest. An hour later I pulled it and it is fantastic. 2:00 PM the second one is 205 degrees 17 hours later. So 2 hour rest and pulled. The pan drippings are in the fridge and I will remove the fat and pour over the pulled meat mixed with a little of my rub.
This is what I began with.
Rubbed and ready to rest.
7:00 pm and into the MES.
7:00 am the next morning.
The top one is 205 degrees and the bottom one is 191 degrees. They are about the same size.
The first one ready to rest.
The first on pulled.
The second one is 205 degrees
Ready to wrap in foil for a rest.

They were naked the entire time. They were both about the same time but ready hours apart. That is why you cook to IT not by time. Thanks for looking.

My busy season should be over soon and I will be back. I have missed all of my friends while I have been away.

Looks like the top one was wider, but thinner, which would get-er-done quicker.

I just ate, but I could still handle some of that Pulled Pork!!

Hey David

Glad to see you back.  Great looking PP--gotta love it.

You said you'll skim off the fat and put the pan drippings back into the meat.  Don't know why, but when I chill the pan drippings and then skim off the fat, the pan is EMPTY and there's nothing to add back.
