Help on ribs.

5-3/4 hours into smoke at 220-230 and rib temp has been stuck at 156. Not much pull back. What to do?

not to many people go by IT for ribs... rather go by the bend test... grab ribs from one end (about half way down) with tongs... hold the slab up in the air.. when ribs bend down close to a 90 degree angle.. they are done... did you check therms for accuracy ? ... just let them keep cooking if they don't past the bend test...

Keith is correct - use the bend test on pork ribs.
