9:00 - Fired up my smoker, trimmed part of fat cap from my 4# butt, rubbed it down liberally with a new rub that sounds like it's worth a try, picked out my woods and soaked, apple, cherry, peach, and a smidge of pecan.

9:30 - Smoker up to 230f, producing a fine blue smoke, pork butt on.




1:30 - we are 4 hours in and internal temp is 150f. Smokers been pretty easy to keep at 225-235f today.



I'll be updating as the smoke comes along, we are about to be in the stall so we'll see how that goes. Can't wait for pulled pork!

3:30 - 6hrs in and internal temp has only gone up about 4 degrees from 2hrs ago at 1:30. It's now 154.7f

 
6:45 - internal temp has reached 199.5f mopped with more sauce re covered and put back in the smoker for 15 minutes then turned off the smoker leaving the door shut to keep the heat in.


I'll leave it in there for an hour or so to rest, then it's into the kitchen for more rest.

8:00 - Moved to kitchen for more rest.

9:00 - Removed foil cover. Bone came right out so I knew it would be tender and moist.



Total smoke time at 225-235f was 9 hrs.
2 hr. Rest

I made this for tomorrow so it can blend flavors overnight in the fridge but had to try a piece and it is fantastic!

Thanks again SMF I couldn't have done such a killer smoke without you guys!
