I was thinking a little outside the box on this smoke. I took some medium sized potatoes rubbed with EVOO and rolled them in sea salt. I then gently placed them in a stockinette, tied off the ends and hung it in a pre-heated MES 40 @ 250*  with corn cob pellets the next hour.

While those were sarting to cook, I took a small Tri Tip roast patted dry, and lightly rubbed with the EVOO , and sprinkled the basic SPOG all over, (salt,pepper,onion powder, garlic powder). I let it rest for perhaps an hour and a half and then also placed in a stocking vertically in the smoker. If I remember correctly I lowered the smoker temp to 240* and let it rock on for about three hours till the IT was 130. I then did a reverse sear 5min oneach side as hot as my gas grill would go with the lid open, Pulled it to let rest for 30+ mins and sliced it up. Here are the few pictures i took. It exceeded what I expected. The meat didn't last long around here. I wish I would have got a picture of the potatoes at the end, they were "almost" done, a little firm. I actually think they were done at some point but dried out due to the time they were in the heat, I probably should have taken them out a little sooner and set in the oven to keep warm.
