Thanks guys. It's only been 2 hours and the IT is already at 133(cooking @250) from the picture, do I have the probe in a good enough place?

Kind of hard to tell. Looks like No. The probe needs to be in the thickest part of the butt and in further. Not touching the bone. If you're lookin' it ain't cookin' You'll get a stall at around 165-170 ishave IT. If you aren't going to foil it at the stall, don't worry...let it ride.

I'd go more towards the middle & into the thickest part about halfway.

Stay way from any bone or it will read hot.

Are you using two meat probes for some reason or did you get them mixed up? The probe you're using for smoker temp is a meat probe.

Thanks guys. Here it is at 160*. Wrapped it up with 1/2 cup of apple juice and now just waiting for the 200* mark.

I'd be careful not to kink that probe cable like it is about 1" below the bottom left corner of the Butt.
