I use a regular CharBroil. Temp at 225-250. Milled rough cut lumber 25 percent seasoned (oak).
Spices
Minced onion
Oregono
Chives
Salt
Pepper
Old bay
Thyme

Sauce
Vinigar
Brown sugar
Tomato paste
Honey
EVO
Salt
Pepper
