So, back to the thread.... Like I say, started out with some AC Legg snack stick seasoning... Never used this before but the spices sure smell good !
Then for the meat mixture it was 7 lbs 80/20 ground beef, 3 lbs ground venison & 2 1/2 lbs ground pork !
After dissolving the 1/2 oz of cure in ice water, my daughter stirred as I put in the seasoning !
After mixing the seasoning & cure into the meat til it was sticky, (now with no stuffer, it's loaves instead of sticks) I used Bears method that he uses for his Bear Loafs.... So my daughter & I packed the first two after lining the tins with Saran Wrap ! This worked great, thanks for the idea Bear ! Then we lined the other two, we also wanted to kick the seasoning on the last two up a notch so we tossed in & remixed a couple good pinches each of CBP, white pepper & red pepper flakes ! Then it was off to the fridge for an overnight rest !
Forward to today, fired up the MES to 130* & tossed on the sausage loaves ! I'll update as I go here !
