Chuck Roast in the Smokey Joe EnerQ

Doing a chuck roast for some pulled beef for the first cook on the Weber Smokey Joe with an EnerQ midsection making it a Mini WSM.
Set the coals up snake method with some cherry chunks for smoke.

Onions, carrots and garlic cloves getting some cherry smoke for making ChefJimmyJ's Au Jus.

Tatonka Dust seasoned chuck roast over the onions, carrots and garlic cloves.

and it is holding temp like a champ!

I'm in... will be interested to see how long your fire will last with just the few briquettes around the outside like that... Is there a purpose to not fill the center since this chuckie will take many hours to cook ??
 
That's a big looking chuckie how much per pound? I've heard of some scary prices from other members. Looking forward to the updates as they happen!

I am going for low n slow with the temp being around 225º for 8 to 10 hours, the snake method should do this... for pulled beef from a chuckie I do them similar to how I do a pork butt for pulled pork. Here are some other chuck roasts I have done to pull...

It is a 3 1/2 pound chuck roast, I believe it was just shy of $5 per pound.
 
Thought it looked bigger then that! That's about the price around here,another member got a sale price of $4.99# non sale price $12.99 that's scary!

The grill is only a small Weber Smokey Joe, that is what makes the roast look so large.
 
When the chuck roast hit an internal temp of 140º it was set in the au jus, foil covered and brought to an internal temp of 205º, this was a 9 1/2 hour cook.

Took the chuck roast out of the au jus and wrapped it in foil and towels for a few hour cooler rest and the au jus was refrigerated to chill to scrap the fatty juices off the top. After a few hour rest the chuck roast was sliced open and then pulled.

Should make for some delicious meals and sandwiches!
