Ive started a build a couple weeks ago. And im working with a budget like most of us. So progress is slower,but gives me time for desighn and development. The smoker I am buildin will be able to hot smoke and cold smoke for things like cheese and bacon, but we cannot forget jerky as well. As I talk about it more I will post pics to describe the process.
 
Lets start off with heat source charcoal,hotplate,wood, propane? All are good sources of heat but what is the easiest to regulate. Propane and electric can be regulated heat source without tending to at all, Not so much for the other. Now we are talking about long smoke times 8 to 12 hours.

ELECTRIC REQUIRES A PELLET OR WOOD CHIP PAN AND NEEDS FEED THROUGH OUT A SMOKING PROCESS AND THE SAME CAN GO FOR PROPANE ALSO,BUT IS THIS THE BEST SMOKE? IN MY OPINION NO. DRIED AND RE HYDRATION OF CHIPS IS NOT. AND COMPRESSED WOULD IS EITHER.

GREEN WOOD GIVES THE BEST SMOKE IN MY OPINION. NOW YOU CAN BUY GREEN CHIPS ONLINE THAT HAVE SHORT SHELF LIFE,BUT THATS NOT FOR ME. IM THINKING GREEN LOG. NOT GOING TO USE A HOT PLATE FOR THAT FOR SURE.

SO MY CHOICE IS Propane and Green log FOR HOT SMOKING.
 
Correct, hickory can cause alot of creosote, if you debark hickory and dry in sun for a month the sap will drain which causes the bitter and creosote. Log has to be upright though not on side.
 
My burner that I built to do propane is quite simple. I used a 3/4 pipe, 2-3/4cap,3/4 floor flange, 1/4 x3/8reducer bushing, 1/4x3/8 bushing, 3/8 gas ball valve, and a proprane low output regulator and supply. Here is picture. Now I can give you hole placemen and diameters if you need just message me.
This system can give you a 3/8 to 1 1/2 flame which is sufficient for all kinds of temperatures.
 
So burner is complete. How about air flow. Do you want a system that draws air as needed or a forced air? For me I want forced air, so jerky can dry evenly and your not loosing smoke with door cracked. Plus you can control smoke all together.

I believe I developed something that will give me forced air that is not over powering. Based off the same concept of the burner. And ideally low on cost. I found this 12 volt air pump for like mattresses and tubes laying around in my basement. I tried the flow at 12 volts to high cfm. So Ihooked it to a 9 volt and cfm is right on the money it cut cfm to about . 1/2 of originally. Which seems to be perfect.
 
I will post pictures of air unit after installed. And hope to have all paint removed from interior this weekend. I was luck to have a freezer with metal interior just painted so a little extra work,but was free.
 
To give you an idea on what this is going to look like I posted pictures. Now this is not commplete I am going to need to drill 1/4 in holes through and through pipe not to hold back air and also need pipe flange, and end cap,but you will get idea of what im doing.

No orifice for the gas or mixing chamber for fuel and air before the burner holes? How will you prevent sooting?
 
Unit has an orifice drilled at #55 drill bit which is standard for propane. And as in for mixing chanber look at outside cap 1/4 x 5 holes 6 holes for longer length.
