What do you do with left over Boston Butt?

My family loves my smoked pork. But how much can you eat? So I took like 2 lbs along with the left over Au jus and popped it In the freezer. Three weeks later make burritos and baked them in the oven with sauce and cheese.. It was fabulous and everyone raved
 
My family loves pulled pork nachos. Chips, pulled pork, BBQ sauce, queso cheese, and ranch beans.

I'll be bribing......ahhhhh......I mean I'll be feeding my mechanic pulled pork to write off some warranty work this weekend on my car.

Ain't that the truth! Whatever may survive the first pass, will be eaten hot or cold right from the refer in a day, two tops...JJ
 
Sometimes I take several pounds of pulled pork and freeze the pork already pulled in 1/2 lb packs.  Then for lunch everyday i take a pack of pulled pork and a couple of buns. it lasts in the freezer for a couple of months so over the course of about a month i have PP sandwiches to eat. when my wife feels like eat BBQ with rice she can make some instant rice and heat up a pack and have BBQ so we avoid leftovers by using it slowly over time! 

Also,  the pulled pork makes great soft tacos with some pico and Monterrey jack cheese!

The only way I have leftovers is to take some right away and vac seal it and in the freezer. Or  what I have been doing lately is doubling up, two butt instead of one, divide the second one up for future good eats. And pulled pork makes anything better

There are only two of us, so most of our PP is technically left over. I freeze most in sandwich portions bags. I keep a couple in the fridge and whet I heat one in the micro, I pull one from the freezer. Great lunches. I also freeze some in quart bags, and I use that in barley/veggie soup, chillie, etc. I've used it in spaghetti, but wasn't thrilled. I think the next time I try that I'll use 1/2 ground turkey and PP, just as I do with Hamburger Helper. It's a texture thing. Yes, you read that right, hamburger helper. Probably my favorite is to use it in Shepard's Pie.

If you can't tell, we like our pork! When the freezer supply gets low, I cook another. And of course I always have a least half of a double pack of uncooked Butt in the freezer!
 
I'm doing a good sized one this weekend (already made my dip) & am loving all the ideas.

That's one of the things that makes this a great place.

My wife takes left over PP when we have any left over and makes fried rice with it. It's rice that has been boiled and then fried with just a touch of olive oil and when rice is done adds PP and teriyaki vooks for a few minutes to get PP hot and at the end she puts in a couple of scrambled eggs and mixes well until egg is done. It is fine

Sounds like the rice made for breakfast,in the Philippines
